Joint opening celebration in Munich: Goethe & Gabel is open

On October 17, branchly celebrated the opening together with the team from Goethe & Gabel. Since then, a restaurant has opened at Häberlstraße 15 at Goetheplatz in Munich. Star chef Felix Adebahr is involved in the establishment, and since day one the AI platform's Culinary Guide has been running there: guests scan the QR code on the coaster and receive recommendations on dishes and wines, information on allergens, and explanations of the ingredients' origin on their phones.

For branchly, the opening marks a new step: after hotels with their own restaurants and over 50 million AI sessions processed, Goethe & Gabel is the first restaurant to be in the spotlight, bringing the AI platform directly to the table. Developed in Germany, GDPR and EU AI Act compliant.

A guide with the kitchen's personality

The difference from a digital menu begins with the tone. The guide does not respond like an information database, but like the chef himself. To achieve this, Felix Adebahr recorded minutes-long voice messages about his dishes: what makes a product special, why he combines it that way, which recommendation he gives to whom. The branchly team incorporated this knowledge, along with the chef's opinions, into the guide. The result is an advisor with the personality of Goethe & Gabel's kitchen, not a neutral reference work.

Two industry problems, one approach

In doing so, the establishment addresses two problems in the restaurant industry. The first is the staff shortage: when new staff are hired, they are often career changers who cannot be sufficiently trained during ongoing operations. The Culinary Guide takes on some of these questions. The second is sustainability: almost every restaurant calls itself sustainable without guests being able to verify it. The guide explains for each dish where the ingredients come from and what the establishment specifically does, from water consumption to packaging at the supplier.

The collaboration with Goethe & Gabel builds on existing experience: branchly already works with several hotels that run their own restaurants, and is now bringing this know-how directly to the table of a restaurant.

"We could have simply put a chat on the website. Instead, we brought a star chef's knowledge to the table. Felix sent us minutes-long voice messages about his dishes, and that is exactly how the guide came about."

Sebastian Flick, founder of branchly

"In the restaurant industry, staff are scarce, and there is often not enough time to thoroughly train new employees. The Culinary Guide steps in exactly there. Everything I know about my kitchen is in it, and then some."
